Nutella-Peanut Butter Banana Bread Sandwich

Contrary to how sinful this sandwich looks like, it is actually not too sweet but yes, quite decadent for a midday/midnight snack because really it’s almost the same as eating a piece of cake, only you call this a sandwich which makes you still sound like you are still sticking to your daily dietary allowance.

My original evil plan was to whip up honey roasted peanut butter (from a jar) with orange marmalade (also from a jar) and schmear an unapologetic amount of that on slices of this banana-walnut bread, but when I opened the cupboard and saw the big jar of Nutella… well of course I instantly abandoned the jar of marmalade! I mean, what can be better than Nutella?… well, maybe a tub of melted Godiva milk chocolate to dip your whole self into.

“Anything is good if it’s made of chocolate” - Jo Brand and I concur and add, A banana bread was always a wholesome baked good until peanut butter was introduced to it, followed by Nutella. And the innocence and wholesomeness of this quickbread were lost forever. But oh my goodness, Elvis would’ve been so proud of this sandwich.

SANTA’S PB AND CHOCOLATE TRAIL BARS
As naughty looking as these cookie bars look, these have all the great and wholesome ingredients that are really nice for you… except for the M&Ms… well, a little naughty is nice! ;) -jeannie <3
Ingredients:
4 cups trail mix (peanuts, almonds, cashews, raisins, M&Ms)
2 cups quick cooking oatmeal
1 1/2 cups all-purpose flour
1/2 cup cocoa powder
1/2 teaspoon baking soda
1/2 teaspoon salt
2 cups packed dark brown sugar
2/3 cup butter, softened
1/2 cup creamy peanut butter
2 large eggs
1 teaspoon vanilla extract
1/2 cup confectioner’s sugar (for dusting the baked bars)
Procedure: 
Preheat oven to 350’F. Line a 9”x13” inch rectangular pan with baking parchment.
1. Sift together, all-purpose flour, cocoa powder, bicarbonate of soda and salt. Set aside.
2. Combine the trail mix and oatmeal. Set aside.
3. Using a wire whisk, beat softened butter and peanut butter together. Then add packed brown sugar and vanilla (beat the butter and sugar until light and fluffy). Add eggs one at a time beating after each addition.
4. Using a spatula/rubber scraper, mix in the flour mixture. Once the flour mixture is well incorporated into the butter mixture, then add the combined trail mix and oatmeal. And thoroughly mix until cookie dough is well combined.
5. Press the cookie dough onto the prepared baking pan.
6. Bake for 40-45 mins. Cool in the pan for 10 minutes then lift and transfer to a wire rack to cool completely. Once cooled, cut into bars. Dust with confectioner’s sugar.
Makes 36 (2-inch) bars

I mean really, these peanut butter and chocolate chunky bars have everything you ever wished for to Santa in a wholesome yet decadent cookie bar; raisins, peanuts, cashews, almonds, oatmeal, peanut butter, chocolate and even a generous scattering of M&amp;M&#8217;s! I believe everyone deserves to indulge in these&#8230; whether you were naughty or nice!

I suddenly came up with this recipe out of the blue last night (at  around 11:00&#160;pm) and by midnight I gave birth to this baked brainchild  of mine.
What makes these cookies soft and chewy are mashed bananas  and oatmeal flour&#8230; I love the healthy special participation of  oatmeal in cookies but sometimes I get bored with the texture and the  time it requires of me to chew the darn rolled oats, so I took out my  mini food processor and whizzed the oats into a fine but still decently  coarse mill.
I am pretty proud of this recipe because these  cookies turned out somewhat decadent than I&#8217;ve anticipated. It also did  not hurt that my house smelled like cookies in the middle of the night. - Jeannie :)

CHEWY SOFT BATCH PEANUT BUTTER AND BANANA COOKIES

*(using a food processor, grind 1 cup + 2 tablespoons rolled oats, this yields 1 cup oatmeal flour)
1/2 teaspoon baking soda
1/2 teaspoon salt
1/2 cup softened unsalted butter
1/2 cup creamy peanut butter (if you want to use chunky pb, it&#8217;s absolutely fine)
2 cups soft brown sugar (not packed)
2 tablespoons mashed banana
1/4 teaspoon banana extract
1 teaspoon vanilla extract
2 eggs
Procedure:
1. Preheat oven at 350&#8217;F. Prepare and line cookie sheets with baking parchment paper.
2. In a medium size mixing bowl, combine all-purpose flour, oatmeal flour, baking soda and salt. Set aside.
3. In another mixing bowl, beat softened butter, peanut butter, soft brown sugar, mashed banana, banana extract, vanilla extract and eggs.
4. Combine and mix the dry and wet ingredients together.
5. Using a small ice cream scooper, scoop cookie dough onto prepared baking sheets and bake cookies for 12-13 minutes or until cookie edges becomes light golden brown.
6. Cool cookies in cookie sheets for 1 minute and transfer onto wire racks to cool.
7. Store in a flat airtight container. Lay cookies flat and separate each layer with baking parchment sheets/wax paper.
Goddess of Scrump&#8217;s Note: You can absolutely add chocolate chips in this cookie recipe, Dark Chocolate Chips will be a devilishly scrumptious contrast with the pb and banana flavor of these cookies. Also these cookies are perfect to use for ice cream sandwiches, the ice cream of choice that will be perfect for these is Butter Pecan! :)
