CREAMY PORRIDGE WITH WARM HONEY-CINNAMON STEWED APPLES

I am one of those breakfast people who finds a bowl of plain porridge to be boring and really quite a daunting task to finish. As much as I like eating wholesome and healthy food specially at breakfast, I can never abide eating something that bores me. So I thought, if ever I eat a bowl of porridge, there has got be something that is warm and mildly sweet and spicy to eat it with.

This Creamy Porridge with Warm Honey-Cinnamon Stewed Apples is the perfect un-boring bowl of oatmeal anyone can ever have.

I came up with this recipe just this afternoon. I bought these golf ball-sized Gala apples yesterday. And every time I have apples around the house I just could not help myself from making something with apples, thus, this warm and mustily spiced apple stew came to be. And lucky is the bowl of porridge that just now became favorable and even sociable at the breakfast table.

Ingredients:

Warm Honey-Cinnamon Stewed Apples

1 cup sliced apples

1 tablespoon butter

2-3 tablespoons honey (depends how sweet you want it)

2 tablespoons water

1 cinnamon stick (broken in half) or 2 cinnamon barks or 1/2 teaspoon ground cinnamon

Put all ingredients in a small sauce pan over medium heat. Wait for the butter to melt and get incorporated with the honey and water. Simmer the mixture slowly over medium heat for 10 minutes or until the apples get soft but NOT mushy. Remove from heat. Set aside.

For the Creamy Porridge

2 cups water

pinch of salt

1 cup quick cooking oatmeal

2 tablespoons granulated sugar

1/2 cup non-dairy, non-fat creamer dissolved in 1/2 water (or 1/2 cup milk, if you prefer)

* I used non-dairy, non-fat creamer because it taste more creamy than milk and it is non-fat.

In a medium sauce pan, bring the water to a boil. Once it boils, add the pinch of salt and quick cooking oatmeal. Simmer for 5 minutes, stirring constantly. Add the sugar and the dissolved non-dairy creamer (or milk). cook for another 5 minutes.

Spoon porridge in a bowl. Top it with the warm apple stew making sure to spoon some of the glorious honey-cinnamon syrup onto the porridge. EAT while everything is still warm.

Serves 2
